This is an interesting question. I would say even if you are going slow, set it to the max chart speed so you get what's right underneath you. That way you could drop your bait right on a fish and know it was right there. They would look like lines though and not arches. So I guess if you weren't using it to try to fish for individual fish, slow would probably be better.
