I have a 15 foot gregor and have a forward casting deck the same level as the front bench. I mostly sit in the chair up front but do stand a little bit in calm water like a lake (I almost never do that in the ocean). Gregors are a flatter vee and of a wider beam than most other brands in that size and style of boat. You might find a modified vee or a jon boat style more stable but you will slap the water more running in choppy conditions (probably not an issue if you're only lake fishing). Check out the pic of Rob's on his "new boat" post on one of the boards here. Your truck will tow an aluminum fine--I towed mine with a honda accord and now with a subaru outback no prob.
